Ah yes, I know it is not Saturday, however the topic of my gratitude kept me from expressing said gratitude at the time. I am grateful for the wondrous delight of beets…that’s right…the humble root vegetable beets.
It took me much of yesterday to gather, hose the dirt off of the little gems and carry them into the house followed by processing into the absolute wonder that is Borscht.
And what an amazing flavorful gigantic pot of this Ukrainian/Polish beet soup we created with our humble homegrown little beets. Thank you garden, thank you Mother Nature and thank you life on this planet for the humble little beets, our own homegrown carrots and dill. Yummity-yum-yum-yum!
